2020: Cancelled May 22, 2020. 2021: Held Aug. 26-Sept. 6, 2021 after the State's peacetime emergency ended July 1, 2021; a scaled-back 'Kickoff to Summer' food event preceded it (Wikipedia). Usual dates: Aug. 27-Sept. 7, 2020 scheduled (twelve days ending Labor Day). Scale: 2,126,551 attendance in 2019 (record); 'the largest single gathering in the state'; one French-fry vendor alone employed 160 people (CBS Minnesota, May 22, 2020).
